Recipe Of The Day: Nigerian Pancake

This is a simple recipe for the thin, delicious Nigerian-style pancakes. It is made with those ingredients that we always have in our kitchen. So you do not have any excuse for not making this recipe right away or latest this weekend.

Most Nigerians think of pancake as just a snack. Yes, pancakes go well with a chilled drink. But have you ever thought of another way to enjoy pancake? Now listen to this! Pancake is the most balanced meal you can have at breakfast as it is a blend of protein (from the eggs), carbohydrates (from the flour) and fats and oil (from the butter and vegetable oil). And we are not even talking about the micro nutrients. Maybe that’s why the pancake is commonly referred to as Diet in Nigeria.
You can eat pancakes with Custard,Akamu (Ogi)orOat Meal.
So put more effort into your weekend breakfast by preparing this recipe for you and your family. Yes, mostly during weekends, so you can relax and enjoy the pancake because you are in no hurry to leave the house.

*.1 cup | 150g of plain flour
*.2 medium eggs
*.½ cup | 125 mls of evaporated milk (Peak or Carnation are common in Nigeria)
*.2 tablespoons of margarine
*.1 cup | 250 mls of water
*.¼ teaspoon of salt
*.6 teaspoons of sugar (or to taste)
*.Ground Chilli Pepper (to taste)
*.Vegetable oil

*.Microwave Oven for melting the margarine:Buy it in USA| in UK

Before you fry the pancake
Put the margarine is a small bowl and melt in the microwave. You can also place the bowl in a bigger bowl of hot water to melt the margarine.
Break the two eggs into the melted margarine and beat till smooth. Then add ½ cup of water.
Add the flour and mix well till there are minimal lumps.
Add the milk, salt, sugar, ground pepper and the remaining ½ cup of water, stir well.
Blend the mix using a liquid blender. This will give the pancake batter the smoothest consistency. If you don’t want to blend it, no problem, just mix the ingredients very well so that the lumps are minimal.
Note:You can also add onions to the pancake but make sure that your blender can liquefy the onions. If not, the pieces of onions will not let you achieve very thin pancakes.
Set a frying pan over medium heat. Add a few drops of vegetable oil. Just enough to lubricate the frying pan.
When hot, pour some pancake batter into the frying pan. Tilt the pan so that the batter coats the surface of the pan evenly. This should be a very thin coat.
Fry the underside of the pancake for approximately 1 minute, shaking the pan from time to time till the pancake comes loose. You can also loosen it with the spatula. Check the underside to be sure it has browned to your liking, preferably light brown.
Flip the pancake so you can fry the top side as well.
The pancake is done when both sides are light brown.
For breakfast, serve with Custard,Akamu (Ogi)orOat Meal. If you just want to snack on the pancake, make sure you have a drink chilling in the freezer before you even start mixing the batter.

What’s more, cell phones will be strictly banned and confiscated if discovered! And it’s all because the high-profile couple do not want a repeat of West’s marriage proposal to Kardashian, which was leaked online by YouTube co-founder, Chad Hurley.
A source told RO:
“Guests will have to go through extensive security, even most of Kim and Kanye’s celebrity friends. devices will be held at a secure location and if someone needs to use during thefestivities, accommodations will be made, but a long way away from the festivities. This is all designed to discourage guests from using their phones.”If someone violates terms of the contract, they will likely be sued, the insider added.
“Kim and Kanye will be licensing the wedding photos for sale and it will also be broadcast on E! as part of their Keeping Up With The Kardashians series,” a source said.However, Beyonce and Kanye will not have to suffer the same fate, Radar has been told.
“There is no way Kanye would ever even dare to ask Jay Z or Beyonce to sign a non-disclosure agreement, or take away their cell phones. He knows that neither one of them would betray his trust.”With wedding preparations in the final stages, the couple has secured their prenuptial agreement.

Nollywood producer, Kunle Afolayan shares this revealing message on his facebook page. Most Nigerians can relate to this, its saddening with all this crisis, only God knows what our future beholds. Feel ya pain bro at some point I was laughing but its true they say the rich also cry

“YES! It is high time I started considering relocation. To where? I don’t know but it’s something that has been bothering me for some time now.
I have always been an advocate of “Yes we are Nigerians and so shall it be” but for some time now the reality of the state of the Nigerian Nation is beginning to take its toll on me. Does our government consider us worthy citizens of Nigeria or we are just fooling ourselves?
There is no electricity to start with and that has been the case since I was born, now I have worked very hard and I am able to afford generator of any size but there is no fuel to run any of them, neither is there fuel to even move around when you need to attend to business.
The life of a Kunle Afolayan is even better than that of majority of most Nigerians and every day I wonder and I ask what the future holds for ‘Iya Basira’ who sells wosiwosi and other petty traders whose goods is sometimes worth less that N10,000.
I am sure a lot of people will consider me a millionaire after I have made a few successful feature films that have recorded good box office figures and international recognition, But the truth is, it’s all make believe just as it is in the movies. If I was living in a better Nation and well-structured country, I probably will be living the life of a celebrity by now but the truth and reality is that, I am still a tenant and so is a lot of our so called celebrities in Nigeria and I am owing banks millions.
As a matter of fact, everybody in my house owns two passports, one for Nigeria and the other is for what is considered to be the most powerful country in the world, I have refused get my citizenship of America because of my sentiments of being “ PROUDLY NAIJA”. E be like say I don wake up now!! Make I carry my “ENTERPRENEURIAL ENERGY “and talent go elsewhere jare…”
